Sharing the prime location within the luxurious 3,200-room Mandalay Bay Resort and Casino, Aureole Las Vegas is one of the oldest fine dining restaurant in the city.

Opened in 1999, Aureole captures the elegance, class, and cuisine of the legendary New York restaurant, making it one of the most respected restaurants in town.

The restaurant was awarded a Michelin Star in 2008 and 2009 and Wine Spectator’s Grand Award and Four Diamond Award every year since 1999, which is a trusted indicator of quality.

Aureole is famous for its distinctive design and its awe-inspiring wine tower that comes complete with “Wine Angels.” Upon entry, you will be greeted by the world’s largest temperature controlled glass and steel wine tower, which is the centerpiece of the dining room.

The four-story wine tower holds an extensive list of over 10,000 bottles of wine made accessible by an elaborate pulley system presided over by servers who float on wires to retrieve your bottle of choice from the towers.

The wine can also be ordered from a tablet, which will suggest pairings based on your dinner selections.

The restaurant’s five dining areas, sets its own unique stage for gourmet exhibitions. Each of the dining area is elegant, lavish and accessible from a grand staircase.

Aureole’s main dining room is large and features vibrant red and blue accents coming together with dark wood in geometric harmony.

The second dining room is called Swan Court and it captures the elegance of New York opera outings. Swan Court features a small outdoor waterfall pool with a couple of graceful swans swimming around.

The room is distinguished by its sun colored palette and unique seating, which adds a bit more luxury to the dining with the circular booths with personal patios.

There is also a private dining area with moveable walls that function like Japanese screens so you can create your own intimate affair or dine with the rest of the restaurant.

The richly colored burgundy and gold “Main Room,” and the “Lounge,” with its intimate cigar and wine bar with leather upholstered wall panels round out the dining rooms.

Apart from the innovative and impeccable design scheme, Aureole offers a wide variety of seasonal dishes that are inspired by the ingredients currently available. For appetizers, you can have caviar, onion soup, organic green salad and a seasonal seafood platter.

The main menu includes delicious dishes like 18 oz. bone in rib-eye, moulard duck breast, blue cheese crusted filet mignon, and niman ranch double pork chop.

The side dishes include parmesan fries, spring vegetable medley, roasted root vegetable medley, sautéed wild mushrooms and braised purple kale.

If you feel for something raw, the Hawaiian Hamachi duo with sashimi style lemon confit is recommended. Aureole’s other signature dishes include Wood-grilled Filet Mignon, chilled lobster salad and Sea scallop sandwiches in a potato crust.

The AAA Four Diamond Award restaurant also offers several tasting menus that changes almost weekly, including a Parallels menu, Vincent’s Seasonal Tasting menu and a three-course Michael Jackson ONE theater menu.

The tasting menus are large and will take some amount of time to get through, it also features wine pairings if you so desire. There is also an extensive dessert menu where treats such as ice cream and sorbet, assorted seasonal berries, and cakes can be enjoyed.

Aureole provides live jazz entertainment every Thursday, so you are sure you will get a dining experience that you will never forget. If you are a smoker, smoking is allowed in Aureole’s lounge area.
